Baked Beef Curry

We love a mild curry in our house. It is one of the boys favorite meals. We will do it with pork, chicken or beef.

This time around we used top sirloin and cut it into strips. So tender and delicious.

Start off with your meat. Whatever you use, season it well with Salt and Pepper, trim of large fat chunks. I cut these into thin strips. Fry on med high heat with some minced garlic and chopped onion.

After the meat is cooked, Add whatever vegetable you want. Most times we use broccoli or cauliflower. This time around, diced potato, shaved carrot and peas.

We use brown basmati, so tasty and filling. I used our rice cooker and made 4 cups. We had company over for this meal and still had lots left over.

I layered the rice in a big roaster.

For the curry sauce we do it 2 different ways. One with cream of mushroom soup and sour cream, one with a white sauce. This one is 2 cans of mushroom soup, 1 cup of sour cream, 1/4 cup of yellow curry powder. Combine with meat and vegetables, and pour over top of rice. Grate some cheddar cheese and place on top. Bake @ 350f for 30 mins.

Delicious!!! Enjoy!!!

Cost:
beef $5
rice $1
vegetables $1
Sauce $2

$9.00. Served 4 adults, 5 kids, 2 babys. Huge portions with lots left over!!
